One Pan Enchilada Casserole

Servings 6


  • 1 bag of yellow or white corn tortillas
  • 1 can black beans
  • 1 16 oz. can enchilada sauce
  • 1 lb browned ground beef or shredded chicken
  • 1 8 oz bag shredded cheese such as Jack Colby Jack, Mexican Blend, or Cheddar
  • Sour Cream Avocado Slices, Guacamole, etc.


  • On medium high heat, brown the ground beef. (or just add your cooked shredded chicken)
  • Turn your burner down to low.
  • Add the black beans
  • Pour in the enchilada sauce
  • Cut all of the tortillas into 1/2 inch thick strips.
  • Stir all of the tortilla strips into the mixture.
  • Add about 1/2 cup of cheese and stir until melted.
  • It is that easy!!
