My Weekly Meals and Meal Prep

This morning, I ran to Sprouts on the way home from dropping off the kids at school and scored some pretty good deals. I was able to get several meals and some other items for lunches and snacks all for $70. Not too bad!

Here is what I got:

The eggs were $2.50and both packages of porkchops were under $3!

Easy Fried Pork Chops and Eggs

I have a couple of kiddos who are going to be really excited about this one!! Enchilada Casserole!

Here are some produce finds, these tomatoes were only $3.98. My kids love to snack on these!

I didn’t need many spices, but with the big spice sale going on, I grabbed these two. The all-purpose is basically 21 season salute from Trader Joe’s and I use it on everything. It was on sale for $2.99. The Mexican seasoning was not really a need, but the price was good at $1.43. 

The brown cow yogurts were .79 ea, and I can say that I ate one already. It was pretty good. The A2 milk was on sale and I have lactose intolerance, so I am going to give it a try. It was $3.99, which isn’t a terrible price, but I will report back on how well it works, etc. At $70 so far for the week, I am still under my grocery budget of $150. Not Bad!

Quinoa Tacos

This is a family favorite recipe. It is perfect for Meatless Monday or Taco Tuesday. Don’t be afraid of the Quinoa, this stuff is delicious! You will thank me later. Seriously.

Quinoa Tacos

1 cup cooked quinoa (makes about 3 cups)

1 can black beans (mostly drained)

1/4 sweet onion chopped or diced

1 garlic clove pressed

1 tsp cumin (or more to taste)

1 tsp chili powder (or more to taste)

1/2 cup frozen corn

Salt and Pepper

1 lime

1 pack of hard or soft taco shells

1/2 tbsp Olive oil

1 bag of shredded cheese

Cook quinoa as directed. (I sub 1 cup chicken broth for 1 cup of the water). In a sauce pan sautee on medium low, the onion in the olive oil until translucent. Then add the garlic and sautee for 30 seconds to 1 minute. (It cooks fast) Add the can of black beans and stir. Add corn and stir. Next add the spices and stir. Finally add 2- 3 cups of the quinoa depending on how much mix you want. If you use three add about 1/4 tsp of the spices. Next squeeze 1/2 the lime on the mixture and stir until warmed through. Warm your taco shells according to the directions on the package. Spoon mixture into shells or on tortillas. Optional ymmy toppings : tomatoes, avocado, cheese, freshly sliced jalapenos and sour cream.

Easy Fried Pork Chops and Eggs

1 pack Pork Chops

1/2 dz eggs

Seasoned Salt

Salt and Pepper

1 tbsp butter

Olive oil

Drizzle Olive Oil into a skillet, let it warm on medium heat until oil is warm. Sprinkle seasoned salt and pepper in the skillet, then lay porkchops in pan. Sprinkle seasoned salt and pepper on the tops of the pork chops and let cook on each side for about 3 – 5 minutes. Continue to turn until cooked through. Wrap cooked pork chops in foil to keep warm. Wipe skillet out with a paper towel and place back on the burner. Melt the butter and then you can fry the eggs a couple at a time.

Serve with Avocado, Sauteed Spinach, Mixed Berries and Honey, etc.

Chicken Noodle Soup

Here is my recipe for an easy, kid friendly meal on a cold day!


Chicken Noodle Soup

2 32oz boxes of Chicken broth

1 rotisserie chicken shredded or cooked chicken shredded or diced

2 Stalk celery diced

3 carrots chopped/ or baby carrots chopped

1/2 – 3/4 bag egg noodles

1/4 tsp onion powder

1/4 tsp garlic powder

1/4 tsp salt

1/8 tsp pepper

Combine broth, chicken, chopped veggies and spices in a stock pan. Bring to a boil, then simmer until veggies are tender. Add  noodles and cook for about 15 more minutes until noodles are tender. Serve with French or Garlic Bread.

Dinner Ideas – 

Taco Tuesday, Grab some tortillas, ground beef, cheese,avocados, limes, tomatoes, onions, cilantro and beans. Use your food processor to make some pico, warm some pintos or black beans, and brown your ground beef with some cumin, chili powder, onion and garlic powder. This is easy and kid friendly!

Make a beef stew – Grab the stew meat, some beef broth,tomatoes, a pack of frozen mixed veggies, onions, and potatoes to make an easy crock pot stew. You will want to brown the stew meat a little before putting in the crock pot. Throw in a couple of bay leaves, salt, pepper and garlic powder for flavor.

Chicken Noodle Soup

Whole Chicken with roast butternut squash and asparagus – Cook the chicken in a crock pot with a little chicken broth, salt and pepper, and onion. Roast the asparagus and butternut squash on a lined baking sheet with a little olive oil and salt and pepper. Bake at 400 for 20 -25 minutes.
